I flew to Chile to meet Lara and we spent the first few days exploring Santiago. We ate lots of empanadas and took the funicular up to the top of Parque Metropolitano de Santiago to see views of the city. I tried some mote con huesillo (sort of a peach tea) and machas a la parmesana (clams baked with parmesan cheese and white wine). We also toured the Pablo Neruda house and visited museums of art and human rights.
Before leaving Santiago, we had an amazing and unique dinner at Boragó (#27 on world's best restaurants 2018). We ate more than 15 courses featuring ingredients from all regions of Chile.
From Santiago, we flew north to el Desierto de Atacama, one of the driest places on Earth. We stayed in San Pedro de Atacama and explored some of the most unique and varied landscape I have ever seen. We drove around the desert to see el Valle de la Luna, Salar de Tara, and Geysers el Tatio. Among the sand dunes, icy mountains, and salt flats we spotted flamingos, donkeys and vicuñas.
On my way back to LA, I managed to schedule a long layover in Mexico City. Had tamales for breakfast at Molino el Pujol, then walked around and ate tacos before flying home.
